Crispy Ranch Chicken

We are having this for supper tonight. It is easy and extremely hard to ruin. The recipe comes from my family's cookbook and the original name is Hidden Valley Chicken Bake. I hope you enjoy it. Check out more great recipes at the Recipe Swap.






Crispy Ranch Chicken
4 boneless, skinless chicken breasts
1 cup flour
3 tbsp flour
2 eggs, lightly beaten
1 packet Ranch dip/dressing mix
1 cup bread crumbs
1-1/3 cups grated Parmesan cheese
2 tbsp butter
2 tbsp solid vegetable shortening
1/4 cup melted butter
Preheat oven to 400*. Coat chicken with flour. Combine milk and eggs in a bowl. Dip chicken in the egg mixture. Combine Ranch mix, bread crumbs, and cheese. Divide this mixture in half and reserve for later use in the refrigerator (or double the recipe). Coat chicken with crumb mixture. In the preheated oven, melt 2 tbsp of shortening and butter in a 9 x 13 pan. Place chicken in pan and drizzle with the remaining butter. Bake uncovered for 1 hour.
